whole wheat blueberry muffins

love muffins. Especially healthy & easy to make muffins. I got this mix from the grocery store not long ago & tried it out this past weekend. It's super quick and so delicious! You should try it out.

"Real blueberries and Hodgson Mill's stone-ground, whole wheat flour make for a delicious blueberry muffin. Nutritious and easy to prepare, these quick-baking muffins include our Milled Flax Seed, rich in Omega-3 oils (450 mg per serving!), making this wholesome family favorite even better."

  • 3 tablespoons of splenda
  • 4 teaspoons of olive oil
  • 1 cup + 2 tablespoons of almond milk
  • 1 egg
Mix all ingredients & preheat oven to 400 degrees.
The recipe said it makes 9-10 muffins, but I was able to make 12 good size muffins.
I lined my cupcake pan with cupcake holders so I would have an easy clean up.
Bake for 16 minutes.

The hard part...

Of the long weekend is the rest of the week that follows! I had such a great weekend just hanging with my husband. Lots of coffee drinking and playing outside was involved. Got to catch up with some good friends that were in town with some breakfast. We also busted out our sno cone maker that was a wedding present. Hope everyone had a great weekend! A huge thanks to all of our soldiers!

Low Fat Carrot & Sweet Potato Soup

Ryder & I made this for dinner Wednesday night and it was delicious! Very easy. Be prepared: it will look like baby food. But I assure you, it's very appetizing and surprisingly filling. I got the recipe from lowfatcooking.about.com. I did some tweaking and made it according to the ingredients we had in the apartment.
  • 2 tsp olive oil
  • touch of garlic
  • 1 small onion, finely chopped
  • 2 tsp cumin
  • 1 pound bag of baby carrots
  • 1 pound sweet potatoes, peeled and cut into 1-inch pieces
  • 3 1/2 cups water
  • salt & pepper to taste
  • 1/2 cup of almond milk
Heat oil in a pot & saute onion until softened. Stir in cumin & cook for 1 minute. Add carrots, sweet potatoes & water. Bring to a boil, then cover & simmer until vegetables are tender, about 20 minutes. When cool, transfer vegetables to a blender & blend until smooth, working in batches. Return to pot to reheat & mix in almond milk if needed. Enjoy!

It was a busy weekend.

First our weekend started in college station at Texas A&M where my cousin graduated and then was commissioned as an officer in the Navy. A huge accomplishment obviously. Then a couple of days later I did a triathlon! My incredibly athletic husband inspired me to give it a shot. It was a blast. It was an all women's triathlon on Mother's Day. 300m swim, 11 mile bike, 2 mile run. We ended the weekend in the historic town of Gruene which we LOVE. Hope everyone has a great weekend!
