Mexican Breakfast Casserole




There's nothing like an easy casserole to make yourself feel like a domestic diva. It was very simple, not many ingredients, & delicious (Ryder said so). We enjoyed the casserole with a couple cups of coffee, fresh strawberries, & turkey bacon cooked by Ryder. (Turkey bacon.. not veggie, fake bacon! I will save the 'we are eating meat' post for later.)

We LOVE breakfast. It's a pretty normal thing for us to have breakfast for lunch and dinner sometimes too.
Ingredients
8 large eggs
6 tablespoons skim milk
2 tablespoons light butter
3/4 teaspoon salt
1/4 teaspoon pepper
1 4 ounce can of green chiles -- chopped
1/2 cup diced jalepeno peppers
2/3 cup low fat, extra-sharp cheddar -- shredded

Directions:
1. Preheat oven to 350 degrees F. 1. Put butter in 8" square baking pan. Set in 350 degree F oven to melt.

2. Slightly beat eggs, milk, salt & pepper. Pour into pan.

3. Bake at 350 for 15 minutes or until eggs begin to set.

4. Sprinkle with cheese & chiles. Draw a wide metal spatula across bottom of pan several times to break up mixture.

5. Bake, breaking up mixture again several times, for 5 more minutes or until of desired doneness.

Fall time

It is looking a lot like Fall at our apartment and I am loving it! We definitely will be carving this cute little pumpkin in the near future. Happy Monday!

Why I love Fall..

  1. Starbucks drinks (Pumpkin Spice latte, no whip, made with skim milk, 2 pumps of pumpkin. Yes we have the healthy ordering down thanks to a helpful barista.)
  2. Boots & scarves
  3. Cool weather (not today, obviously.)
  4. Fall scented candles.. love them!
  5. Dark nail polish
  6. Pumpkin patches (on our to do list)
  7. Pumpkin carving (also on our to do list)
  8. Leaves changing colors.
  9. Our wedding annniversary =)
  10. Crock pot meals

Clayton's take southeast Texas..

This past weekend our little family (Ryder, me, & Sheldon duh) drove to Nederland for our nephews third birthday. We had lots of fun seeing everyone and just enjoying the weekend. I am sure you can tell how crafty my sister in law is. I hope everyone had a great weekend!

Anniversary recap

One week ago we celebrated our one year wedding anniversary! We had the best day. We were both off of work and just got to enjoy the whole day together. Lots of good food, Capitol touring, shopping, movie watching of Frankenweenie (so funny!), and eating the top layer of our wedding cake. We are looking forward to many many more years together! :)

I cannot believe when have been married a year already! It really has flown by. I can't imagine life any other way.. I am so excited for wherever God & life leads us in the future.

Ladies: There are great men out there that will treat you like an angel. It is normal to always be lifted up emotionally by your partner. Real love always makes the other person better. Anxious feelings, fighting, & criticism is not love... & it never will be.

Lunch Adventure

Just a nice little stroll on my lunch break the other day.. It was torture going back to work after being out in the breeze & sunshine. However, it did make for a better last half of the work day.

Oh I am already loving all things fall. Skinny pumpkin spice lattes, candles, decorations, & of course clothes. I haven't done any shopping in a long time, but surprisingly I think I will be trying out Old Navy soon.

Oklahoma

We had a great weekend. We went and visited Ryder's parents in Oklahoma! It was a rainy, relaxing weekend. On the way back home we got to meet up with our friend Tony who we had not seen since we moved. Hope everyone had a great weekend and has a great week!
